Rheofermentometer Rheo F4
Device description:
The Rheo F4 rheofermentometer is a device that simulates dough rising. The test determines the development of the dough over time and the development of fermentation gases in the dough. At the same time, the time when fermentation gases leaked into the environment due to the porosity of the dough is determined. This makes it possible to determine the optimal rising time, as well as to determine the quality of the yeast or the effect of additives (ascorbic acid, amylases, etc.) on rising.
